A fishing recipe discovered when I was living in Romania came to my mind a few days ago. Today, however, I did not hesitate to put it into practice. Early in the morning I ran to the fish store and bought a very good-looking trout. Personally, it seems to me that trout is the most suitable for fish brine, which I would like to present to you today. Without wasting time, let’s get into the recipe.
For this recipe you need:
•1 or 2 kg of fish (fresh not frozen)
•200 ml water
•a big tomato and a can of tomato sauce
•a bell pepper
•3 or 4 cloves of garlic
•a dill connection
•a hot pepper
•salt and pepper with lemon
•2 bay leaves
After we have prepared to have all the ingredients at hand, we grill the tomatoes, peppers, and hot peppers. Meanwhile, spray the fish with oil and sprinkle a little salt and let it sit until you finish cutting the grilled vegetables. When the vegetables are grilled, take them out, peel them lightly, and then chop them not very finely, depending on your preferences.
In the pan in which you choose to make the sauce add 200 ml of water. When the water starts to boil, add the chopped vegetables and let it boil, then add the bay leaves, chopped garlic, and a part of the dill, finely chopped. After a few minutes, add the fish grilled beforehand. Cover with a lid and simmer for about 10 minutes.
After it is ready, take the pan off the heat and leave it covered for a few minutes to give the flavors time to blend perfectly. When ready to serve, sprinkle a little fresh dill over. In Romania, this dish is served with hot polenta.
